What are Microgreens and why do I need them?

When growing a seed you start with the sprouting phase then the microgreen phase prior to baby greens.

Since microgreens pack all the nutrients in a small stem you don’t need as much to make an impact on your nutrition! Studies have shown that some microgreens are 40 times more nutrient dense than their mature counterpart. LESS IS MORE!

WHY DO YOU NEED THEM?

Sunflower shoots – mild “romaine” flavor and crunch providing added iron, calcium and protein
Broccoli greens – are young broccoli plants that are rich in glucoraphanin, a precursor of sulforaphane. Preclinical studies suggest that sulforaphane, an isothiocyanate, has anticancer effects against prostate, breast, and urinary cancers. 1 ounce of broccoli greens has the same level of sulforaphane as 1.5 pounds of mature broccoli. Less is more!
Daikon Radish – add a little kick to your meal with one of the most nutritious! Rich in vitamins A, B, C, E, & K, folic acid, niacin, potassium, iron, phosphorus, pantothenic acid, calcium, magnesium, zinc, carotenes
Kale – kale in it’s tiny form is not bitter but a delicious add to anything! Don’t like kale but KNOW it’s so good for you? Try it in a microgreen instead! It won’t take as much to get the health benefits!
Arugula – you like the powerful punch of arugula? If so, you are going to LOVE it as a microgreen! Delicious and beautiful added to any salad, wrap, pasta dish, beans and rice, whatever!
Spicy Salad mix – a mix of red and green mustards. Rich in vitamins A, K, C, E, thiamine, folate, riboflavin, magnesium, potassium, calcium, phosophorus and so much more!
Tatsoi – this is a new favorite with the flavor similar to both broccoli and kale! It’s also high in vitamin C, calcium, potassium and folate. Goes great on everything!
Wheatgrass – so many studies on this wonder green showing it’s aid on supporting the immune system through chemotherapy treatment and more! It also supplies you with so many vitamins and minerals such as potassium, dietary fiber, vitamin A, vitamin C, vitamin E, vitamin K, thiamin, riboflavin, niacin, vitamin B6, pantothenic acid, iron, zinc, copper, manganese, selenium and protein.
